Still Innovating: The Dairy Industry’s Newest Drink

Big news out of Atlas Obscura this week (tip of the bucket hat to Friend of the Blog Jamie): Creameries are making alcohol out of milk.

No, this isn’t a white russian. And no, they aren’t just leaving milk out for a really long time (my impression is that’s how you create cheese and/or give your gastro-intestinal system quite the punishment). They’re using whey, a byproduct of the cheese-creation process, and the alcohol coming out (which has been called Cowcohol by some) is similar to vodka.
